Brocolli Wokly

I bought one of those big brocolli things at Costco and have regretted it ever since Sat. So I've been thinking what to make with the 5lbs of brocolli ready to go bad any day now. The light came on. Freeze half, use half... now just to find a brocolli containing recipe. I found this one that was actually kind of good and really easy.

Ingredients:
1 package brocolli (probably 2-3 brocolli crowns cut up)
3 chicken breasts
2 (10.75) oz. cans condensed cream of chicken
1/2 cup milk
1 tsp. lemon juice
1 tsp. garlic powder
1/2 tsp. curry
1/4 cup bread crumbs
1 1/2 cups cheddar cheese (from my 50lb. bag of cheese also from Costco - you would think I learned my lesson right? But some things are such a good deal no matter how many armies it can feed.)

Directions:
1. Cut up chicken in small pieces. Heat skillet with a little oil. Cook chicken with 1/2 tsp. garlic powder and 1/4 tsp. salt just until browned (don't over cook, it goes in the oven).
2. Line bottom of baking pan with brocolli (9"x13"). Layer with the chicken.
3. In mixing bowl, add the cream of chicken, milk, 1/2 tsp. garlic powder, 1/2 tsp. curry. Pour mixture over chicken. Top with cheddar cheese.
4. Bake in 350 degree oven for 20 mins.
5. Sprinkle bread crumbs and bake for additional 10 mins.

Serves 6. I served over white rice. The rice soaked up the cheesey sauce and added some good flavor. (Don't worry about the curry being over powering, I couldn't even tell it was added - just provided some good background flavor).

***Sorry no picture - I didn't even think about it, but it looked really pretty.

That's similar to a chicken broccoli casserole that my mom makes. (good stuff) And it seems to be something you can tweak a little to make it healthy.

I have a whole bag of frozen fruit bits that I got from Costco that's taking up valuable freezer space. Doesn't make the best fruit smoothies like I thought it would. Any ideas?
