I made this recipe for dinner tonight, and I thought it was good enough to share (and easy to make).
Ingredients:
~ 2 eggs
~ 1/2 cup honey
~ 1 cup finely chopped pecans
~ 1 cup dry bread crumbs
~ 1/4 tsp. salt and pepper
~ 6 chicken breasts or 4 chicken breasts cut into nuggets
~ 1/3 cup butter, melted
Directions:
~ Preheat oven to 375 degrees.
~ In a bowl, beat eggs and honey together until well blended.
~ In a separate bowl, toss together pecans, bread crumbs, salt and pepper.
~ Dip chicken breasts in egg and honey mixture, and then roll in pecan mixture, coating thoroughly. Press pecan mixture onto chicken breast if it falls off.
~ Arrange chicken side by side in a buttered baking dish.
~ Drizzle melted butter evenly over chicken.
~ Bake for 45 minutes, until chicken is no longer pink.
~ Drizzle honey over chicken.
I recommend serving w/Breanne's famous salad which I think is:
~ Baby spinach
~ Feta cheese
~ Almonds or pecans
~ Thinly sliced apples or pears
Recommended dressings:
~ Balsamic Vinaigrette
~ Red Wine Vinaigrette
~ Raspberry Vinaigrette
* I think it's good even w/o dressing!

*tip - cover for 35 mins and uncover the last 10 mins so the nuts won't burn.
