Sweet and Spicy BBQ Salad

This is my favorite salad to order at Zipps. It's a really easy recipe and always tastes so delicious!

Ingredients
Chicken Breast
Black Beans
Corn
Pepper Jack Cheese
Thin tortilla strips
BBQ Sauce
Ranch
Salsa
Iceburg Lettuce
Carrots

Directions
I cook one chicken breast per person and throw it on the grill. Cook until done. Make some fresh salsa (I hate making it so I usually bum some off Jana or Breanne). Fresh Salsa is key, don't use that stuff you buy in a can. Yuck. Prepare the lettuce and carrots. Toss in a big bowl. Add black beans (drained), corn (drained), pepper jack cheese. Top with tortilla strips, chicken, add equal parts of bbq sauce and ranch and salsa.

It's a nice combination of crunchy (from corn and chips), spicy (from cheese and salsa), creamy (from ranch), and sweet (from bbq). Not to mention it's packed with lots of protein.

Hey Bianca! I can't believe you're married and have a little one--I guess that's what happens when you're out of touch for 5 years! So good to hear from you! We have a Wheeler street here that I go on quite often--I always think of you and Michael! We're doing good, just 2 more years of school until Al finally finishes his Phd! No kiddos yet, I work at USC as a research assistant for a dietician.
